Ingredients
- 4 - boneless chicken breasts, flattened
- 1/2 cup parmesan cheese
- 2 - eggs, beaten
- 3/4 cup plain breadcrumbs
- 3/4 cup dry cooking sherry
- 1/2 cup oil
- 1/2 cup sliced mushrooms, fresh or canned
- 4 slices monterrey jack cheese
How To Make chicken a la genoa

Step 1Put beaten eggs,parmesan cheese, and breadcrumbs in 3 separate bowls. Press chicken into each one.

Step 2Heat oil, add chicken and brown on both sides. Remove from pan and place in a single layer in a baking dish.

Step 3Add sherry and mushrooms to hot oil and saute. Place a slice of cheese on each breast, spoon mushrooms over and add sherry mixture.

Step 4Bake at 325 degrees, covered, for 30 to 40 minutes.
