Chicken a go go

This was an easy go "to" company dish that I have been making for over 25 years! I am a chef by profession, but this simple dish I "came up" with years ago, because of what I had on hand still is requested!
Ingredients

1/4 lbbutter

1 largeonion
-
1 tspblack pepper

1 tspkosher salt

4 Tbspsherry
-
4 tsplemon juice

1 can(s)cream of mushroom soup, golden

3/4 cdry white wine or chicken broth

2 lbboneless skinless chicken cut into 1 inch pieces (white or dark meat) & 4 tbs olive oil

1 pkgfresh mushrooms sliced
How to Make Chicken a go go
- Saute onion in butter until translucent. Mix in pepper, salt, Sherry, lemon juice, mushroom soup, and dry white wine. Simmer 20 minutes, stir twice.
- While sauce is simmering, brown chicken in olive oil until almost cooked through. Add chicken to above sauce and simmer 10 minutes more, stir twice.
- Add sliced fresh mushrooms, and simmer for about 10 minutes more, stir twice(you want them firm)
I like to serve with wild rice. If serving family style, add parsley and a bit of paprika on top of chicken & sauce.
