This was an easy go "to" company dish that I have been making for over 25 years! I am a chef by profession, but this simple dish I "came up" with years ago, because of what I had on hand still is requested!

Ingredients
- 1/4 pound butter
- 1 large onion
- 1 teaspoon black pepper
- 1 teaspoon kosher salt
- 4 tablespoons sherry
- 4 teaspoons lemon juice
- 1 can cream of mushroom soup, golden
- 3/4 cup dry white wine or chicken broth
- 2 pounds boneless skinless chicken cut into 1 inch pieces (white or dark meat) & 4 tbs olive oil
- 1 package fresh mushrooms sliced
How To Make chicken a go go

Step 1Saute onion in butter until translucent. Mix in pepper, salt, Sherry, lemon juice, mushroom soup, and dry white wine. Simmer 20 minutes, stir twice.

Step 2While sauce is simmering, brown chicken in olive oil until almost cooked through. Add chicken to above sauce and simmer 10 minutes more, stir twice.

Step 3Add sliced fresh mushrooms, and simmer for about 10 minutes more, stir twice(you want them firm) I like to serve with wild rice. If serving family style, add parsley and a bit of paprika on top of chicken & sauce.
