cherry chicken salad

Northern Michigan is known for it's summer cherries. We love them fresh, dried, in dips, salsas, bbq sauces, chocolate covered, etc... I love adding dried cherries to my chicken salad. I love to serve this with croissants but any bread or toast will do - or eat it without any bread at all!

Ingredients

  • 6 cups chopped, cooked chicken
  • 1 cup chopped celery
  • 1/2 cup chopped sweet onion
  • 1 cup chopped dried cherries
  • 1 cup hellman's mayonnaise
  • 1/2 cup sour cream
  • 1/2 lemon, juice of
  • 1 teaspoon sugar
  • 1 teaspoon seasoning salt
  • 3/4 cup slivered almonds

How To Make cherry chicken salad

  • Step 1
    Heat oven 350 degrees F. Toast the slivered almonds for about 3 minutes until browned. Let cool.
  • Step 2
    Combine the chicken, celery, onion, and dried cherries in a large bowl.
  • Step 3
    In a separate bowl, combine the mayo, sour cream, lemon, sugar, and seasoning salt. Add this to the chicken mixture and gently mix in until it is all combined.
  • Step 4
    Gently fold in the toasted nuts.
