this is a nice recipe a change from BBQ..fried..breaded etc..I buy chicken breasts when they are on sale,,boneless and skinless,,In a pot of 4or 5 cups I add the chicken to the pot and add a carrot. celery rib and a yellow onion and simmer until chicken is tender about 15 to 18 minutes..remove chicken discard vegies and pour stock through sieve freeze cooked chicken in baggies to be used in other chicken recipes and also freeze the stock...time saver by pouching the chicken....

Ingredients
- 4 - boneless skinless chicken breasts{small|
- 2 teaspoons canola or vegetable oil
- 2 cups broccoli florets fresh or frozen
- 2 medium carrots cut into 1/4 inch wide coins
- 1 cup 10fl oz//284ml cream of chicken soup
- 1/2 cup cheeze whiz spread or 1 cup finely shredded cold chedder cheeze
- 1 1/2 cups minute rice prepared to package directions
- 1/2 teaspoon lemon zest, grated

Step 1If using already cooked chicken add all the ingredients into stock pot....if using raw chicken saute in skillet with with 1/2 tsp oil and cook for 8 to 10 minutes..
