Robynne Glenn

My family loves breaded chicken dishes, and how can you go wrong with cheese, ham and pesto in a flavorful breading? Trust me! You can't! I was so happy with this chicken that I had my neighbor try it and she LOVED it! Thanks, Melanie!

chicken breast, pounded to 1/4" thickness
3 c
swiss cheese, grated
12-16 slice
deli ham
4-6 tsp
prepared pesto
1/4 tsp
garlic salt
olive oil, extra virgin

1/2 c
panko bread crumbs
1/4 c
italian bread crumbs
1/4 c
corn starch
1/4 c
instant potato flakes, dry ( me)
1/4 c
parmesan cheese, grated
1 tsp
italian seasoning

1Sprinkle chicken breasts with garlic salt. Place 3 or 4 slices of ham on each breast. Spread 1-2 teaspoons of pesto over ham and top with Swiss cheese. Fold chicken in half like a book. Set aside.
2To make coating combine all ingredients and mix thoroughly. Carefully coat chicken with, being sure not to lose any of the yummy stuffing.
Heat oven to 300 degrees.
3In a large skillet, heat olive oil on medium heat and saute chicken on each side until nicely brown. Don't worry if all the cheese is not melted. Transfer chicken to a baking sheet and bake for 15-20 minutes or until cheese is melted and chicken is cooked through.
