cheesy mexican chicken

I needed something fast and easy for the crockpot and this is what I came up with. You can't much easier then just three ingredients.

Ingredients

  • 1 cup chunky salsa
  • 1 pound chicken breasts (cut in large slices while partially frozen)
  • 4 slices monteray jack cheese with jalapeno peppers

How To Make cheesy mexican chicken

  • Step 1
    Spread a small amount of salsa in pan and put chicken breasts over the top. Spread with additional salsa. Put the 4 slices of cheese over the breasts
  • Step 2
    Serve with rice and tortilla.
  • Step 3
    This can also be made in the oven: Put the 4 slices of cheese over the breasts and cover with aluminum foil. Bake at 350 for 50 mins.
