I needed something fast and easy for the crockpot and this is what I came up with. You can't much easier then just three ingredients.

Ingredients

1 c
chunky salsa
1 lb
chicken breasts (cut in large slices while partially frozen)
4 slice
monteray jack cheese with jalapeno peppers

How to Make Cheesy Mexican Chicken

Step-by-Step

  • 1Spread a small amount of salsa in pan and put chicken breasts over the top. Spread with additional salsa. Put the 4 slices
    of cheese over the breasts
  • 2Serve with rice and tortilla.
  • 3This can also be made in the oven: Put the 4 slices
    of cheese over the breasts and cover with aluminum foil.
    Bake at 350 for 50 mins.
