Ingredients
- 1/2 cup mozzarella cheese, part skim milk, shredded
- 2.5 ounces mushrooms, sliced and drained
- 1/4 cup plain lowfat yogurt
- 1 tablespoon chopped chives or scallions
- 1 tablespoon snipped fresh parsley
- 1 tablespoon pimiento, finely chopped
- 4 - chicken breast halves, skinless and boneless
- 1 tablespoon fine dried bread crumbs
- 5/8 teaspoon paprika
- 1 tablespoon plain lowfat yogurt
How To Make cheesy chicken rolls

Step 1For filling, in a small bowl combine cheese, mushrooms, the 1/4 cup yogurt, chives, parsley and pimiento.

Step 2Place 1 chicken breast half, boned side up, between 2 pieces of clear plastic wrap.

Step 3Working from the center to the edges, pound lightly with a meat mallet to 1/8\" thickness.

Step 4Remove plastic wrap.

Step 5Repeat with remaining chicken.

Step 6Sprinkle lightly with salt and pepper.

Step 7Spread some of the filling on each chicken breast half.

Step 8Fold in the sides and roll up.

Step 9Arrange rolls seam side down in a 10x6x2\" baking dish.

Step 10Combine bread crumbs and paprika.

Step 11Brush chicken with the 1 tablespoon yogurt; sprinkle with crumb mixture.

Step 12Bake in 350 degree oven for 20-25 minutes or until chicken is tender and no longer pink.
