mozzarella cheese, part skim milk, shredded
2.5 oz
mushrooms, sliced and drained
1/4 c
plain lowfat yogurt
1 Tbsp
chopped chives or scallions
1 Tbsp
snipped fresh parsley
1 Tbsp
pimiento, finely chopped
chicken breast halves, skinless and boneless
1 Tbsp
fine dried bread crumbs
5/8 tsp
1 Tbsp
plain lowfat yogurt

How to Make Cheesy Chicken Rolls


  • 1For filling, in a small bowl combine cheese, mushrooms, the 1/4 cup yogurt, chives, parsley and pimiento.
  • 2Place 1 chicken breast half, boned side up, between 2 pieces of clear plastic wrap.
  • 3Working from the center to the edges, pound lightly with a meat mallet to 1/8" thickness.
  • 4Remove plastic wrap.
  • 5Repeat with remaining chicken.
  • 6Sprinkle lightly with salt and pepper.
  • 7Spread some of the filling on each chicken breast half.
  • 8Fold in the sides and roll up.
  • 9Arrange rolls seam side down in a 10x6x2" baking dish.
  • 10Combine bread crumbs and paprika.
  • 11Brush chicken with the 1 tablespoon yogurt; sprinkle with crumb mixture.
  • 12Bake in 350 degree oven for 20-25 minutes or until chicken is tender and no longer pink.
