This is my version of mac and cheese, my husband demands it at least once a month, it's his favorite dinner.

Ingredients

  • 2 - chicken breasts, boneless and skinless
  • 4 ounces bacon
  • 1 - yellow onion, fine diced
  • 1 can cream of chicken soup
  • 1 can evaporated milk
  • 1 bag 8 oz shredded cheddar or colby-jack cheese
  • 1/2 cup shredded asiago cheese
  • 1 lb box pasta of choice
  • - salt and pepper to taste

How To Make cheesy chicken pasta

  • Step 1
    Bring a pot of salted water to a boil for your pasta, and cook according to the directions. Meanwhile, cut the chicken breasts and bacon into 1/2 off pieces, and saute along with the fine diced onion until cooked.
  • Step 2
    Add the cream of chicken soup and the evaporated milk, and bring this to just bubbling, then add the cheeses,and turn off the burner. Stir until the cheeses are melted.
  • Step 3
    Add the drained, hot pasta and combine. Add black pepper, and salt to taste.
