Cheesy Chicken Marinara

1/4 c
olive oil
chicken breasts, boneless, skinless, cut in 1" strips
1/2 lb
mushrooms, sliced
chopped onion
minced garlic cloves
16 oz
marinara sauce
1 c
shredded mozzarella cheese
1/4 c
grated parmesan cheese
2 Tbsp
chopped parsley
16 oz
spaghetti, cooked


1In a wok, heat 2 tablespoons oil over high heat until hot, swirling to coat sides of pan.
2Add chicken strips and stir-fry until cooked through, but still juicy, 3 to 4 minutes.
3Remove to a plate.
4In same wok, heat remaining 2 tablespoons oil over high heat.
5Add mushrooms, onion, and garlic. Stir-fry until mushrooms are lightly browned, 3 to 5 minutes.
6Return chicken to wok.
7Pour in marinara sauce.
8Cook until heated through, about 3 minutes.
9Add mozzarella and parmesan cheeses.
10Sprinkle parsley on top.
11Cover and cook until mozzarella melts, 1 to 2 minutes.
12Serve over bed of cooked spaghetti/pasta.
