Ingredients

  • 2 cups cheddar cheese, shredded
  • 2 cups monterey jack cheese, shredded
  • 2 cups chopped cooked chicken
  • 2 cups light sour cream
  • 1 can cream of chicken soup, undiluted
  • 2 tablespoons finely chopped onion
  • 1/4 teaspoon ground black pepper
  • 1/8 teaspoon salt
  • 1 can enchilada sauce (mild)
  • 10 - 8 inch flour or whole wheat tortillas

How To Make cheesy chicken enchiladas

  • Step 1
    In a large bowl, combine all cheeses, cooked chicken, sour cream, soup, onion, salt and pepper. Spoon about 1/2 cup of this mixture off center on each tortilla; roll up. Place seam side down in a greased 13x9x2 inch baking dish.
  • Step 2
    Pour enchilada sauce over the tortillas. Cover with tinfoil and bake at 350 degrees F for approximately 45 minutes. Let stand for 10 minutes before serving.
