Ingredients

  • 2 c
    cheddar cheese, shredded
  • 2 c
    monterey jack cheese, shredded
  • 2 c
    chopped cooked chicken
  • 2 c
    light sour cream
  • 1 can(s)
    cream of chicken soup, undiluted
  • 2 Tbsp
    finely chopped onion
  • 1/4 tsp
    ground black pepper
  • 1/8 tsp
    salt
  • 1 can(s)
    enchilada sauce (mild)
  • 10
    8 inch flour or whole wheat tortillas

How to Make Cheesy Chicken Enchiladas

Step-by-Step

  1. In a large bowl, combine all cheeses, cooked chicken, sour cream, soup, onion, salt and pepper. Spoon about 1/2 cup of this mixture off center on each tortilla; roll up. Place seam side down in a greased 13x9x2 inch baking dish.
  2. Pour enchilada sauce over the tortillas. Cover with tinfoil and bake at 350 degrees F for approximately 45 minutes. Let stand for 10 minutes before serving.
