cheesy chicken chowder

I found this recipe in a newspaper and thought it sounded real good. it really is good as it sounds! everyone went for seconds and i was impressed by how well it turned out! the soup tastes just like you buy at a restaurant! i really had to pat myself on the back with this one!

Ingredients

  • 2 - 14oz. cans chicken broth
  • 2 cups diced, peeled potatoes
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1/2 cup diced onion
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup butter
  • 1/3 cup flour
  • 2 cups milk
  • 2 cups shredded cheddar cheese
  • 2 cups diced or shredded cooked chicken

How To Make cheesy chicken chowder

  • Step 1
    Bring chicken broth to boil in large saucepan. Reduce heat. Add potatoes, carrots, celery, onion, salt and papper. Cover and simmer until vegetables are tender. (about 15 minutes)
  • Step 2
    Brown chicken in medium saucepan. Remove chicken aside to a bowl or plate.
  • Step 3
    Melt butter medium saucepan. Add flour and mix well. Gradually stir in milk and cook over low heat until slightly thickened. Stir in cheese and cook until melted. Add cheese mixture to broth and vegetables along with chicken. Cook and stir over low heat until throughly heated.
