Ingredients

  • 1 can biscuit
  • 1 large boneless/skinless chicken breast
  • 1/2 stick butter
  • 1/2 - onion, finely chopped
  • 1 small can red peppers
  • 3 tablespoons flour
  • 1 cup chicken broth
  • 1 1/2 cups monterey jack cheese (or swiss)
  • 1 cup milk
  • - salt/pepper to taste

How To Make cheesy chicken biscuit pie

  • Step 1
    boil chicken breast, till cooked, chop and set aside
  • Step 2
    in a lightly buttered pie dish, take half of the biscuits and press to form a pie shell
  • Step 3
    in a skillet melt the stick of butter, add the chopped onions cook about 5 mins till translucent
  • Step 4
    add the 3 tablespoon of flour and make a rue (paste)gently add 1 cup of milk and keep stirring until smooth, add the cup of chicken broth...let it bubble a few minutes
  • Step 5
    take off heat...add in the diced red peppers, chopped chicken and 1 cup of the cheese, combine well
  • Step 6
    pour into pie dish..with the other half of the biscuits on a lightly floured board press together making the top cover for the pie..bake at 350 for 15 mins, then add the other 1/2 of the cheese on top and bake another 10 mins until brown and cheese is melted.
