cheesy broccoli chicken bake - cass's
This Casserole is another most requested by friends and family. This can be made with a layer of rice also...I was fresh out of rice, but it's great just the way it is. Just thought I'd throw that out there for other ideas. This is great alone, or with just a salad, or potato..I served it with browned red potato wedges... My pictures.

Ingredients
- 3 cups cooked chicken, cut up into bite sized pieces
- 1 - 12 ounces broccoli flourets ( i buy green giant fresh flourets) can use frozen, thawed, boiled or steamed for just a few minutes
- 1 1/2 cups shredded, cheddar cheese
- 1 - sleeve, ritz crackers
- 1/4 cup butter
- 1 tablespoon dried, parsley
- 1 - 2 tablespoons dried onion flakes
- 1 tablespoon parmesan cheese
- 1 1/2 cups cooked rice ( optional )
- CHEESE SAUCE
- 2 cups milk
- 1/4 cup cornstarch, dissolved in 1/2 cup cold water
- 1/3 cup chicken stock
- 1 1/2 tablespoons chicken bullion paste, or 2 - 3 bullion cubes
- 2 cups milk
- 1 1/2 cups shredded, cheddar cheese
- 1 teaspoon pepper
- 1 teaspoon salt

Step 1Preheat oven to 350 degree F. Prepare a 9 x 13 baking dish with cooking spray.

Step 2Prepare the broccoli, either steam or boil; for just a few minutes. DO NOT OVERCOOK Drain and run cold water over the broccoli to stop the cooking process..you don't want mushy broccoli.

Step 3Layer the chicken and broccoli.

Step 4Sprinkle with the onion flakes; set aside.

Step 5Sauce: In a medium sized saucepan; melt the 1/3 cup of butter, and add everything but the cheese, stir and keep stirring until thickened. I taste the sauce now, and if it needs more salt, pepper, cheese or bullion..I add it now.

Step 6Stir in the 1 1/2 cups cheese until melted.

Step 7If using rice, spread it over the broccoli and chicken now. If not; pour the cheese sauce evenly over the chicken and broccoli.

Step 8Sprinkle the remaining 1 1/2 cups of cheese over the cheese sauce.

Step 9Melt the 1/2 stick of butter, pour over the ritz crumbs. Add the Parmesan cheese, parsley flakes; mix well and sprinkle evenly over the casserole.

Step 10Bake for 40 - 45 minutes or until golden brown and bubbly. Let set for 5 - 10 minutes to set up. Enjoy!
