cheese chicken casserole

I 'adopted' this recipe yesterday. It was supposed to be chicken lasagne, but after making it, I think it would make a much better casserole with more noodles. The flavors are really good, so I didn't change much of the basic ingredients. I also think it would be good with a few jalapenos thrown in... lol

Ingredients
- 1 - lg bag wide egg noodles (or your favorite pasta)
- 1/2 - onion, chopped
- 1/2 - green bell pepper, chopped
- 4 tablespoons butter
- 1 can cream of chicken soup
- 1 can cream of mushrooom soup
- 1 large can mushrooms, sliced
- 1 large jar pimentos, drained and chopped
- 1/3 cup chicken broth
- 1 teaspoon basil
- 1 - whole chicken, boiled and deboned
- 1 cup cottage cheese
- 2 cups cheddar cheese, grated
- 1 cup parmesan cheese, grated
How To Make cheese chicken casserole

Step 1Cook noodles in boiling, salted water until just tender; drain and rinse.

Step 2Saute onion and bell pepper in butter until onion is clear and tender.

Step 3Stir in soups, mushrooms, pimento, broth and basil. Add noodles and chicken, mix well.

Step 4Put half of mixture in large casserole dish. Top with cottage cheese, 1 cup cheddar and 1/2 cup parmesan cheese.

Step 5Add rest of chicken mixture. Cover and bake at 350* for 40 minutes. Uncover, top with remaining cheeses and bake for 5 minutes more.
