A few people who I have given this recipe claim cashews are too expensive. You can substitute the cashews for peanuts, if desired.

Ingredients
- 3 tablespoons butter, melted
- 1/2 cup flaked coconut
- 1/2 cup chopped cashews
- 10 - buttery round crackers (ritz)
- 4 - skinless, boneless chicken breasts; each cut into three parts
How To Make cashew chicken

Step 1Preheat oven to 350 degrees.

Step 2Place crackers, cashews, and coconut in a food processer and process until they are coarsely chopped.

Step 3Dip chicken in melted butter and egg and roll in cracker mixture. Place chicken in foil lined baking dish. Any extra cracker mixture can be blended with a little of the leftover butter and gently packed onto the chicken breasts.

Step 4Bake at 350 degrees F for 30-35 minutes. Season with salt and pepper, if desired, and serve.
