Ingredients
- 1 tablespoon cornstarch
- 1 tablespoon brown sugar
- 1 cup chicken broth, i used 1 t. better than bouillon
- 1 tablespoon soy sauce, light
- 3 tablespoons olive oil, extra virgin
- 1 small chicken breast boneless and skinless
- 1/2 small green bell pepper, cut in small strips
- 1 can water chestnuts,(8 ounce) drained
- 1 teaspoon grated gingerroot
- 2 green onions, sliced
- 1/2 cup cashews, salted
How To Make cashew chicken

Step 1Fix jasmine rice in rice cooker or on the stove.

Step 2Use a medium or large skillet. Cut up chicken breast in small pieces. Add 2 Tablespoons olive oil to skillet. Cook chicken on low until no longer pink.

Step 3Put paper towel on plate. Remove chicken from pan and let rest on plate.

Step 4Mix first 4 ingredients until smooth.

Step 5In same pan, heat remaining oil and stir fry green pepper, water chestnuts and ginger until pepper is crisp tender. About 3 - 5 minutes.

Step 6Stir broth mixture and add to pan with green onions. bring to boil. Cook and stir until sauce is thickened.

Step 7Stir in chicken and cashews. Heat through. Serve over rice.
