carmelized onion chicken
I like chicken. It is just so many things you can do with chicken. I found this recipe in "A Taste of Home" magazine some years back. I wrote it down and probably left out a few steps but did my best to duplicate it and I personally think it turned out very well. I love it even though maybe I did leave out a few steps!

Ingredients
- 4 - boneless chicken breasts (i cut mine in half because some of them are so big)
- 1/4 teaspoon salt
- 1/4 teaspoon lemon-pepper seasoning
- 2 tablespoons canola oil
- 8 - bacon strips
- 1/4 cup brown sugar
- 1/2 - onion
- 1/2 cup shredded colby-monterrey jack cheese
How To Make carmelized onion chicken

Step 1Sprinkle chicken with salt and lemon pepper seasoning. In large skillet, cook chicken in oil until no longer pink. I sometimes put a lid on it and turn it down. When ready set aside and keep warm.

Step 2In same skillet cook bacon over medium heat until crisp. Using a slotted spoon remove and put on paper towel, drain reserving 2 Tablespoons of drippings.

Step 3In the same skillet saute onions and brown sugar until onions are tender and golden brown. Place 2 bacon strips on each chicken breast, top with carmelized onions and cheese.
