Ingredients
- BRINE
- 1/2 cup Kosher salt
- 1/4 cup sugar
- 1 medium onion. quartered
- 2 tablespoons garlic, minced
- 1 large orange, quartered
- 3 sprigs thyme
- 2 sprigs rosemary
- 2 sprigs sage
- 4 cups water
- 6 - pieces chicken
- SPICE MIX
- 1 tablespoon Ancho chili powder
- 2 tablespoons onion powder
- 2 tablespoons onion powder
- 4 teaspoons smoked paprika
- 2 teaspoons black peppercorn
- 2 teaspoons annatto seed
- 2 teaspoons coriander seeds
- BBQ SAUCE
- 2 cups ketchup
- 1/4 cup yellow mustard
- 1/4 cup tamarind paste
- 2 tablespoons Worcestershire sauce
- 1 tablespoon Gochujang sauce
- 1 tablespoon soy sauce
- 1 tablespoon lemon juice
- 2 tablespoons brown sugar
- 1/2 teaspoon sesame oil
How To Make caribbean style grilled spicy bbq chicken

Step 1Mix the ingredients for the brine. Add the chicken pieces and let them brine for 8 hours.

Step 2For the spice mix. Take the seeds and grind them in a coffee grinder.

Step 3Add the remaining ingredients to them and set aside.

Step 4Mix the ingredients together for the BBQ sauce. Set aside.

Step 5Remove the chicken from the brine and dry with paper towels. Get the grill ready.

Step 6Rub the spice mixture over the chicken pieces and brush with the BBQ sauce.

Step 7Grill turning and brushing with the sauce for about 30 minutes.
