    sage

  • SPICE MIX
  • 1 Tbsp
    Ancho chili powder
  • 2 Tbsp
    onion powder
  • 2 Tbsp
    onion powder
  • 4 tsp
    smoked paprika
  • 2 tsp
    black peppercorn
  • 2 tsp
    annatto seed
  • 2 tsp
    coriander seeds
  • BBQ SAUCE
  • 2 c
    ketchup
  • 1/4 c
    yellow mustard
  • 1/4 c
    tamarind paste
  • 2 Tbsp
    Worcestershire sauce
  • 1 Tbsp
    Gochujang sauce
  • 1 Tbsp
    soy sauce
  • 1 Tbsp
    lemon juice
  • 2 Tbsp
    brown sugar
  • 1/2 tsp
    sesame oil

How To Make caribbean style grilled spicy bbq chicken

    Mix the ingredients for the brine. Add the chicken pieces and let them brine for 8 hours.

    For the spice mix. Take the seeds and grind them in a coffee grinder.

    Add the remaining ingredients to them and set aside.

    Mix the ingredients together for the BBQ sauce. Set aside.

    Remove the chicken from the brine and dry with paper towels. Get the grill ready.

    Rub the spice mixture over the chicken pieces and brush with the BBQ sauce.

    Grill turning and brushing with the sauce for about 30 minutes.
