1 lb
chicken breast, cut into strips
2 tsp
curry powder
1/2 tsp
1/4 tsp
3 Tbsp
oil, divided
2 Tbsp
garlic, minced
1 Tbsp
grated fresh ginger
1 medium
red bell pepper, cut into strips
1 medium
yellow bell pepper or orange, cut into strips
stalks celery, cut diagonal
1 can(s)
(14 oz) light coconut milk
2 tsp
lemon zest, grated
1 large
mango, cut into bite size pieces
3 Tbsp
fresh chopped basil

How to Make Caribbean Mango Chicken


  • 1season chicken with curry powder, salt and pepper.
  • 2in a large nonstick skillet, heat 2 tablespoons oil over medium heat. saute chicken until just cooked, about 7-8 minutes. remove to plate and set aside.
  • 3add 1 tablespoon oil to pan. saute garlic and ginger along with peppers and celery. saute 5-6 minutes. stir occasionally.
  • 4add coconut milk, lemon zest and mango, along with chicken. heat through. stir in basil.
  • 5serve with short grain rice.
