Ingredients
- 1 pound chicken breast, cut into strips
- 2 teaspoons curry powder
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 3 tablespoons oil, divided
- 2 tablespoons garlic, minced
- 1 tablespoon grated fresh ginger
- 1 medium red bell pepper, cut into strips
- 1 medium yellow bell pepper or orange, cut into strips
- 2 - stalks celery, cut diagonal
- 1 can (14 oz) light coconut milk
- 2 teaspoons lemon zest, grated
- 1 large mango, cut into bite size pieces
- 3 tablespoons fresh chopped basil
How To Make caribbean mango chicken

Step 1season chicken with curry powder, salt and pepper.

Step 2in a large nonstick skillet, heat 2 tablespoons oil over medium heat. saute chicken until just cooked, about 7-8 minutes. remove to plate and set aside.

Step 3add 1 tablespoon oil to pan. saute garlic and ginger along with peppers and celery. saute 5-6 minutes. stir occasionally.

Step 4add coconut milk, lemon zest and mango, along with chicken. heat through. stir in basil.

Step 5serve with short grain rice.
