This is a recipe that I concocted from a hand written scrap of paper that I found in my recipe file. It was for a grilling marinade that I decided to use as a cooking/braising liquid. Get out your blender and give it a whirl. Oh mon! It's oh, so tasty.

Ingredients
- 2 - red peppers chopped
- 1/2 - large onion chopped
- 4 - scallions chopped
- 1 1/2 tablespoons vegetable oil
- 3 - serano chilis chopped
- 3 - cloves of garlic chopped
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground allspice
- 1/4 teaspoon black pepper
- 3/4 teaspoon kosher salt
- 6-8 - bone in chicken thighs, skin removed
- 1 can 14.5 oz fat free, low sodium chicken broth
How To Make caribbean chicken

Step 1Put all ingredients in a blender except the chicken and chicken broth and buzz until liquified. Place chicken and marinade in large plastic re-sealable bag and refrigerate for a few hours.

Step 2Place chicken and marinade into a large pot and add the broth. Bring mixture to a boil, cover, reduce heat and simmer for 40 minutes. Serve with rice.
