An easy weekday dinner. You can use breast halves, just modify the cooking times. Balsamic reduction is sold ready-made at the grocery, but it's easy (and less expensive!) to make your own. I keep homemade reduction in the fridge at all times.

Ingredients For caprese chicken

2 Tbspolive oil, divided use

4thin chicken breast fillet slices (about 1 lb total)

salt & pepper to taste

3/4 cred onion, diced

4 clovegarlic, minced

3 chalved cherry tomatoes

1/8 tspdried thyme

2 tspbalsamic vinegar

3/4 tsphoney

4 ozfresh mozarella, cubed
- IF YOU CAN GET IT, IT'S BETTER TO USE CILIEGINE MOZARELLA (SMALL, BITE SIZED BALLS) OR BOCCONCINI (SLIGHTLY LARGER BITE SIZED BALLS). JUST MAKE SURE YOUR FRESH MOZARELLA IS BITE-SIZED.

1/4 cbalsamic vinegar reduction (or glaze)

1/4 ctightly packed fresh basil, thinly sliced
How To Make caprese chicken

1Season the chicken fillets with salt and pepper. Heat 1 tablespoon of the oil in a heavy skillet over medium high heat until the oil is hot, but not smoking. Add the fillets and cook for two minutes per side, or until the chicken is done. Remove chicken from pan and keep warm.

2To the same pan over medium heat, add the remaining tablespoon of oil. Add the onion and cook until it is soft and translucent, about 3 minutes. Scrape up any brown bits left in the pan. Add the garlic and cook for about 30 seconds. Don't let it burn!

3Add the cherry tomatoes, thyme, balsamic vinegar and honey. Season with salt and pepper. Cook until the tomatoes are slightly softened, about 2-3 minutes.

4Return the chicken fillets to the pan, nestling the chicken into the tomatoes. Scatter the mozarella throughout. Cover the pan and remove from the heat. Let sit for several minutes to allow the cheese to get soft.

5Uncover, drizzle the balsamic reduction over the top, and sprinkle with the fresh basil. Serve warm. Make sure to serve crusty bread to sop up the delicious juices.
