Ingredients
- 1/2 pound bacon, cut into small bits
- 1 stick butter
- 3 celery ribs, chopped
- 1 large red onion, diced
- 1 - 8 oz packages mushrooms, sliced
- 1 cup all-purpose flour
- 32 oz packages chicken broth, low-salt
- 4 cups whole milk
- 1 pound cheddar cheese, shredded
- 1 tablespoon Worcestershire sauce
- 1 tablespoon tabasco hot sauce
- 1/2 teaspoon salt
- 1 teaspoon pepper
- 1 bottle warm beer
- GARNISH:
- sour cream, fat-free
- chives, dried
- bacon, cooked crisp & crumbled
- popcorn, popped
How To Make canadian cheddar cheese soup

Step 1Cook bacon in a large pot until until crisp. Add butter. Once the butter has melted, add the onions, mushrooms & celery & cook until tender, 10 minutes. Add the flour (roux) & mix well.

Step 2Pour in broth & let simmer. Stir constantly until lumps no longer appear. While the broth is simmering, warm up milk in a second large pot or in your microwave. You want it slightly warm, not hot.

Step 3Once milk has warmed, carefully add it to the pot of broth, stirring constantly to thicken. Reduce heat to low & slowly add the cheese, a little at a time. Mix well until melted.

Step 4Add salt, pepper, worcestershire, tabasco & warm beer, stirring continuously. Simmer on low another 15 minutes. Then ladle into bowls. Top with a dollop of sour cream, crispy, crumbled bacon, chives & a small handfull of popcorn.
