cajun style chicken
This dish has impressed everyone I've ever served it to. Sometimes I have to leave off the mushrooms or the onions, for certain picky folks! This is a really simple, but impressive dish to serve for company. The greens seen in the picture are collard greens.

Ingredients
- 4-6 - boneless, skinless chicken breast
- 2 tablespoons olive oil
- 8 ounces fresh mushrooms, sliced
- 1 - large onion, peeled and sliced into rings
- 2-3 cups (14.5 oz.) chicken broth (i use 3 because hubbie likes extra sauce)
- 1/2 cup all-purpose flour
- - salt & pepper to taste
- - cajun seasoning to taste
- - hot cooked rice
How To Make cajun style chicken

Step 1Saute mushrooms and onions in oil; Remove from pan and set aside.

Step 2While mushrooms and onions are cooking, sprinkle chicken breasts generously with cajun spice and add to hot pan.

Step 3Cook chicken breasts over medium high heat until done all the way through (I do about 6 minutes per side) Remove to plate keep warm.

Step 4Mix together chicken broth and flour in a large (4cup) measuring cup until smooth. Pour broth into pan. Heat to simmer, stirring until thickened.

Step 5Return mushrooms and onions to sauce; stir. Return chicken to pot and serve with hot cooked rice with more sauce on top.
