Cajun Style Chicken
4boneless, skinless chicken breast
8 ozfresh mushrooms, sliced
3 Tbspolive oil
2 can(s)(14.5 oz.) chicken broth
1large onion, peeled and sliced into rings
3 - 4 Tbspall-purpose flour
·pepper to taste
·cajun seasoning to taste
·hot cooked rice
How to Make Cajun Style Chicken
- Saute mushrooms and onions in oil; Remove from pan and set aside. Meanwhile add chicken breasts, sprinkle generously with pepper and cajun seasoning and cook until thoroughly done.
- Add chicken broth and heat to simmer, make a smooth flour paste and add to broth. Simmer, stirring until thickened. Return mushrooms and onions to sauce; stir. Transfer chicken to four plates. Serve with hot cooked rice with more sauce on top.
