This dish has impressed everyone I've ever served it to. Sometimes I have to leave off the mushrooms or the onions, for certain picky folks! This is a really simple, but impressive dish to serve for company. The greens seen in the picture are collard greens.

    boneless, skinless chicken breast
  • 8 oz
    fresh mushrooms, sliced
  • 3 Tbsp
    olive oil
  • 2 can(s)
    (14.5 oz.) chicken broth
  • 1
    large onion, peeled and sliced into rings
  • 3 - 4 Tbsp
    all-purpose flour
  • ·
    pepper to taste
  • ·
    cajun seasoning to taste
  • ·
    hot cooked rice

How to Make Cajun Style Chicken


  1. Saute mushrooms and onions in oil; Remove from pan and set aside. Meanwhile add chicken breasts, sprinkle generously with pepper and cajun seasoning and cook until thoroughly done.
  2. Add chicken broth and heat to simmer, make a smooth flour paste and add to broth. Simmer, stirring until thickened. Return mushrooms and onions to sauce; stir. Transfer chicken to four plates. Serve with hot cooked rice with more sauce on top.
