Ingredients
- 1 - chicken, cut into serving pieces
- - salt, black pepper and cayenne pepper, to taste
- 1/2 cup vegtable oil
- 1 pound of fresh pork sasage
- 3 large onion chopped
- 1 large bell pepper, chopped
- 4 - stalks of celery, chopped
- 2 teaspoons of garlic powder
- 2 cups water
- 1/2 cup chopped green onion tops
- 1/2 cup chopped parsley
How To Make cajun smothered chicken

Step 1Season chicken with slt, black pepper and cayenne pepper, brown chicken in hot oil in a heavy skillet and remove from skillet when brown.

Step 2Brown pork sausage in oil, remove from skillet and cut into 1 1/2-inch pieces. Remove most of the oil from the skillet and add onion, bell pepper and celery: cook until onions are transparent. Add pork sasage, chicken and garlic powder to skillet with onions; slowly add water , cover and simmer 30 to 40 minutes. add green onion tops and parsley just before serving: serve over hot rice.
