    chicken, cut into serving pieces
  • ·
    salt, black pepper and cayenne pepper, to taste
  • 1/2 c
    vegtable oil
  • 1 lb
    of fresh pork sasage
  • 3 large
    onion chopped
  • 1 large
    bell pepper, chopped
  • 4
    stalks of celery, chopped
  • 2 tsp
    of garlic powder
  • 2 c
    water
  • 1/2 c
    chopped green onion tops
  • 1/2 c
    chopped parsley

How to Make CAJUN SMOTHERED CHICKEN

Step-by-Step

  1. Season chicken with slt, black pepper and cayenne pepper, brown chicken in hot oil in a heavy skillet and remove from skillet when brown.
  2. Brown pork sausage in oil, remove from skillet and cut into 1 1/2-inch pieces.
    Remove most of the oil from the skillet and add onion, bell pepper and celery: cook until onions are transparent. Add pork sasage, chicken and garlic powder to skillet with onions; slowly add water , cover and simmer 30 to 40 minutes. add green onion tops and parsley just before serving: serve over hot rice.
