Making this dish will definitely keep you very busy in the kitchen, however it is mmm,mmm good! One of the hands down, best meals I cook ever, period! This recipe can also be made with shrimp only, chicken only, smoked sausage or any combination thereof.
2While pasta is cooking, sprinkle Cajun seasoning generously over chicken and shrimp. Grill over medium coals until shrimp is pink and heated through. Continue cooking chicken until done, slice chicken diagonally into strips. Set chicken & shrimp aside, keep warm.
3Drain pasta well. Set aside and keep warm.
4Add remaining ingredients except chopped parsley to a deep frying pan or wok. Add more cajun seasoning if desired, reserving chopped parsley and some of the parmesan cheese for garnishing.
5Heat over low heat until cheese is melted and sauce is thick and bubbly. Add pasta and toss until thoroughly combined.
6Spoon out pasta and sauce onto 6 plates, top with chicken and shrimp and garnish with parmesan and parsley.
