A quick, spicy dish I came up with when I had few ingredients in the house. I needed to go shopping!!
But I did have chicken, pasta and seasonings. That's all you need!

Ingredients

  • 4 oz
    dried ronzoni healthy harvest linguine
  • 2
    boneless, skinless chicken breasts cutlets, cut into strips.
  • 2 Tbsp
    butter
  • 2 tsp
    cajun seasoning
  • 1
    green bell pepper, chopped.
  • 1/2
    of a red bell pepper, chopped.
  • 4 large
    mushrooms, sliced.
  • 1 large
    green onion, finley chopped.
  • 1-1/2 c
    light cream
  • 1/4 tsp
    basil
  • 1/4 tsp
    lemon pepper seasoning
  • 1/4 tsp
    salt
  • 1/8 tsp
    garlic powder
  • 1/8 tsp
    pepper
  • 2 Tbsp
    grated parmesan cheese.

How to Make Cajun chicken & linguine

Step-by-Step

  1. Cook pasta as directed, drain, set aside. Place chicken strips and Cajun seaoning in bowl, toss to coat. In lg skillet over medium heat, saute chicken in butter for 5-7 min. Add both bell peppers, mushrooms and green onion. Cook 3 min. Reduce heat to med-low. Stir in light cream. Season w/ basil, lemon pepper, salt, garlic powder and pepper. Heat through, stirring occasionally. In lg serving bowl, toss linguine w/ sauce. Sprinkle w/ parmesan cheese.
