I came up with this one and make them all the time, but this is the first time I've written down the recipe.

Ingredients
- 1 box zatarain's smothered chicken mix (prepared as directed with water and oil)
- 1 pound chicken breast halves, skinless and boneless
- 1 can refried beans
- 6-8 - medium flour tortillas
- 1 can enchilada sauce (temperature of your choice)
- 16 ounces cheese, shredded (cheddar or mexican blend)
- 8 ounces sour cream
How To Make cajun chicken enchiladas

Step 1prepare zatarain's mix as directed with chicken.

Step 2smear tortillas with beans in a thin layer.

Step 3fill with zatarain's chicken and rice mixture.

Step 4roll and place side by side in a 9 x 13 pan.

Step 5smear tops with sour cream.

Step 6pour enchilada sauce over top.

Step 7sprinkle cheese on top.

Step 8bake at 375 degrees until cheese is melted and enchiladas are heated through.

Step 9You can top with whatever your preference is....lettuce, tomato, onion. I also have 'kicked up' the enchilada sauce with cajun seasoning.
