cajun chicken enchiladas

I came up with this one and make them all the time, but this is the first time I've written down the recipe.

Ingredients

  • 1 box zatarain's smothered chicken mix (prepared as directed with water and oil)
  • 1 pound chicken breast halves, skinless and boneless
  • 1 can refried beans
  • 6-8 - medium flour tortillas
  • 1 can enchilada sauce (temperature of your choice)
  • 16 ounces cheese, shredded (cheddar or mexican blend)
  • 8 ounces sour cream

How To Make cajun chicken enchiladas

  • Step 1
    prepare zatarain's mix as directed with chicken.
  • Step 2
    smear tortillas with beans in a thin layer.
  • Step 3
    fill with zatarain's chicken and rice mixture.
  • Step 4
    roll and place side by side in a 9 x 13 pan.
  • Step 5
    smear tops with sour cream.
  • Step 6
    pour enchilada sauce over top.
  • Step 7
    sprinkle cheese on top.
  • Step 8
    bake at 375 degrees until cheese is melted and enchiladas are heated through.
  • Step 9
    You can top with whatever your preference is....lettuce, tomato, onion. I also have 'kicked up' the enchilada sauce with cajun seasoning.
