  • CAJUN SEASONING MIX

  • 1 tsp
    onion powder
  • 1 tsp
    black pepper
  • 1 tsp
    adobo seasoning
  • 1/2 tsp
    dried cilantro
  • 1/2 tsp
    dried garlic
  • 1/2 tsp
    chili powder
  • 1/4 tsp
    chipotle pepper
  • dash
    salt
  • dash
    cayenne pepper
  • CORN RELISH

  • 1/4 c
    frozen corn thawed
  • 4
    chopped green onions
  • 2 Tbsp
    dried jalapenos
  • 1 tsp
    chopped cilantro
  • 1 tsp
    olive oil
  • CORNCAKE

  • 2
    eggs beaten
  • 2 c
    buttermilk cornbread mix
  • 1 c
    buttermilk
  • 1/4 c
    oil
  • 1 can(s)
    jalapeno peppers chopped not pickled
  • 1/4 tsp
    onion powder
  • 1/2 c
    manchego cheese
  • 1
    8 oz cream corn
  • 1/4 c
    sour cream
  • pinch
    salt
  • pinch
    black pepper
  • 1 tsp
    seasoning mix
  • CREAM SAUCE

  • 2 Tbsp
    butter
  • 1/4 c
    chopped onion
  • 1
    pint whipping cream
  • 1/4 c
    sour cream
  • 2 Tbsp
    whipped cream cheese
  • 1 tsp
    seasoning mix
  • MEAT

  • 3
    bonless chicken breasts

How to Make Cajun chicken and Jalapeno corncakes

Step-by-Step

  1. mix seasoning ingredients
  2. pre heat oven 350. spray a 13x9 in baking dish with olive oil spray. place in oven while pre heating. mix corncake ingredients. pour into warm dish and bake 35-40 mins
  3. pound chicken breast and season generously on both sides. spray with olive oil and press seasoning into meat. let rest while you make the relish
  4. mix corn relish ingredients
  5. pan sear chicken in olive oil then keep in warm oven till ready to assemble dish
  6. make cream sauce. melt butter in skillet and add onions. when they are softened add dried jalapenos and seasoning. add cream cheese, sour cream and whisk until smooth. add whipping cream and whisk again. now keep this warm
  7. slice chicken thin and place on top of a corncake square. pour some sauce over and top with corn relish. ENJOY !!!!
