How To Make cajun chicken and jalapeno corncakes

1mix seasoning ingredients

2pre heat oven 350. spray a 13x9 in baking dish with olive oil spray. place in oven while pre heating. mix corncake ingredients. pour into warm dish and bake 35-40 mins

3pound chicken breast and season generously on both sides. spray with olive oil and press seasoning into meat. let rest while you make the relish

4mix corn relish ingredients

5pan sear chicken in olive oil then keep in warm oven till ready to assemble dish

6make cream sauce. melt butter in skillet and add onions. when they are softened add dried jalapenos and seasoning. add cream cheese, sour cream and whisk until smooth. add whipping cream and whisk again. now keep this warm

7slice chicken thin and place on top of a corncake square. pour some sauce over and top with corn relish. ENJOY !!!!
