Ingredients
- CAJUN SEASONING MIX
- 1 teaspoon onion powder
- 1 teaspoon black pepper
- 1 teaspoon adobo seasoning
- 1/2 teaspoon dried cilantro
- 1/2 teaspoon dried garlic
- 1/2 teaspoon chili powder
- 1/4 teaspoon chipotle pepper
- dash - salt
- dash - cayenne pepper
- CORN RELISH
- 1/4 cup frozen corn thawed
- 4 - chopped green onions
- 2 tablespoons dried jalapenos
- 1 teaspoon chopped cilantro
- 1 teaspoon olive oil
- CORNCAKE
- 2 - eggs beaten
- 2 cups buttermilk cornbread mix
- 1 cup buttermilk
- 1/4 cup oil
- 1 can jalapeno peppers chopped not pickled
- 1/4 teaspoon onion powder
- 1/2 cup manchego cheese
- 1 - 8 oz cream corn
- 1/4 cup sour cream
- pinch - salt
- pinch - black pepper
- 1 teaspoon seasoning mix
- CREAM SAUCE
- 2 tablespoons butter
- 1/4 cup chopped onion
- 1 - pint whipping cream
- 1/4 cup sour cream
- 2 tablespoons whipped cream cheese
- 1 teaspoon seasoning mix
- MEAT
- 3 - bonless chicken breasts

Step 1mix seasoning ingredients

Step 2pre heat oven 350. spray a 13x9 in baking dish with olive oil spray. place in oven while pre heating. mix corncake ingredients. pour into warm dish and bake 35-40 mins

Step 3pound chicken breast and season generously on both sides. spray with olive oil and press seasoning into meat. let rest while you make the relish

Step 4mix corn relish ingredients

Step 5pan sear chicken in olive oil then keep in warm oven till ready to assemble dish

Step 6make cream sauce. melt butter in skillet and add onions. when they are softened add dried jalapenos and seasoning. add cream cheese, sour cream and whisk until smooth. add whipping cream and whisk again. now keep this warm

Step 7slice chicken thin and place on top of a corncake square. pour some sauce over and top with corn relish. ENJOY !!!!
