  • 3
    boneless skinless chicken thighs cut into small chunks
  • 2 Tbsp
    cajun seasoning
  • 4 Tbsp
    butter divided
  • 4
    green onions chopped white and green parts separated
  • 3 clove
    garlic minced
  • 1/4 c
    sweet vermouth
  • 1 c
    heavy cream
  • 1/2 c
    grated parmesan cheese
  • 4 oz
    fettuccine pasta cooked in boiling water and drained reserving 1/2 cup pasta water

How to Make Cajun Chicken Alfredo


  1. Place the chicken in a bowl and add the cajun seasoning and rub it all over the chicken.
  2. Add 2 tbsp butter to a large skillet and add the chicken and cook until browned on all sides. Add the white parts of the green onions, and garlic. Cook 2 minutes. Add the Vermouth and let most evaporate
  3. Add the heavy cream and reserved pasta water. Bring to a simmer. Stir in the Parmesan cheese. Add the pasta and cook for 5 minutes. Stir in the remaining 2 tbsp butter. Top with the green parts of the green onions.
