bunyan's diabetic adobo with garlic fried rice

I like to do this one up then when the meat and rice has cooked, I'll throw a bag of frozen stir fry veggies in the pan with the meat stir thoroughly, heat just long enough for the veggies to heat through and voila!

Ingredients
- ADOBO
- - 2 1/4 # of meat, cut into chunks (your choice of pork or chicken)
- - 1 cup vinegar
- - 1 clove garlic, crushed
- - 1 head garlic, crushed
- - 1/2 cup water
- - 1 tsp. peppercorns
- - 1 tbsp. extra virgin olive oil
- GARLIC FRIED RICE
- - 4 tbsp. extra virgin olive oil
- - 1 clove garlic, crushed finely
- - 4 cups cooked brown rice, refrigerated overnight
- - sea salt to taste
How To Make bunyan's diabetic adobo with garlic fried rice

Step 1For the Adobo:

Step 2Wash pork, chicken or beef

Step 3Place in a cooking pan (I use a wok)

Step 4Mix in other ingredients

Step 5Cover the pan and bring mixture to the boil, using medium heat

Step 6Once boiling, stir mixture to separate meat pieces.

Step 7Lower heat, cook until meat is tender, stirring mixture once or twice

Step 8When meat is tender, transfer meat to a container and allow liquid in the pan to reduce almost completely

Step 9Once liquid has reduced almost completely, put the meat back in the pan and allow to saute, stirring lightly.

Step 10For the Garlic Fried Rice:

Step 11Stir the chilled rice to separate the grains

Step 12In a non-stick skillet, heat oil over medium-high heat

Step 13Saute garlic until brown. Don't burn it or it will be bitter!

Step 14Add rice and saute until rice is evenly cooked
