bunyan's diabetic adobo with garlic fried rice

I like to do this one up then when the meat and rice has cooked, I'll throw a bag of frozen stir fry veggies in the pan with the meat stir thoroughly, heat just long enough for the veggies to heat through and voila!

Ingredients

  • ADOBO
  • - 2 1/4 # of meat, cut into chunks (your choice of pork or chicken)
  • - 1 cup vinegar
  • - 1 clove garlic, crushed
  • - 1 head garlic, crushed
  • - 1/2 cup water
  • - 1 tsp. peppercorns
  • - 1 tbsp. extra virgin olive oil
  • GARLIC FRIED RICE
  • - 4 tbsp. extra virgin olive oil
  • - 1 clove garlic, crushed finely
  • - 4 cups cooked brown rice, refrigerated overnight
  • - sea salt to taste

How To Make bunyan's diabetic adobo with garlic fried rice

  • Step 1
    For the Adobo:
  • Step 2
    Wash pork, chicken or beef
  • Step 3
    Place in a cooking pan (I use a wok)
  • Step 4
    Mix in other ingredients
  • Step 5
    Cover the pan and bring mixture to the boil, using medium heat
  • Step 6
    Once boiling, stir mixture to separate meat pieces.
  • Step 7
    Lower heat, cook until meat is tender, stirring mixture once or twice
  • Step 8
    When meat is tender, transfer meat to a container and allow liquid in the pan to reduce almost completely
  • Step 9
    Once liquid has reduced almost completely, put the meat back in the pan and allow to saute, stirring lightly.
  • Step 10
    For the Garlic Fried Rice:
  • Step 11
    Stir the chilled rice to separate the grains
  • Step 12
    In a non-stick skillet, heat oil over medium-high heat
  • Step 13
    Saute garlic until brown. Don't burn it or it will be bitter!
  • Step 14
    Add rice and saute until rice is evenly cooked
