This is the first meal I cooked for my husband after we got married; the funny thing is before we 'tied the knot' he had warned me that he was a picky eater (we hadn't been out on many 'food dates' because his work moves him around a lot, we did the video chat thing most)then when I started cooking for him he hasn't been as picky as he thought he was, as it turns out he just doesn't like processed foods! ;)

Ingredients

Add to Grocery List

  • 1/3 c
    honey
  • 1/3 c
    chili sauce
  • 1/2 tsp
    red pepper (may reduce to 1/4 tsp)
  • 1 tsp
    cider vinegar
  • 1/8 tsp
    ground ginger
  • 1/8 tsp
    ground cumin
  • 4
    boneless, skinless chicken breasts; cut into strips

How to Make Buffalo Chicken

Step-by-Step

  1. Mix all ingredients except chicken.
  2. Add chicken and toss to coat well.
  3. Cover and refrigerate about 30 minutes to marinate.
  4. Heat 12" skillet over medium-high.
  5. Add chicken to skillet; cook and stir 4 to 6 minutes.
  6. Add remaining marinade; cook and stir 6 to 8 minutes.
  7. I like to serve this with mashed potatoes and mixed vegetables. Also on a day when I have the time I make dinner rolls too.
