buffalo chicken with loaded potatos

This is a recipe that I found on Facebook. I tweeked it some and came up with this. My husband is still begging for this again.

Ingredients

  • 2 pounds chicken breast cut into 1" cubes
  • 8 -10 - red potatoes cut into 1" cubes
  • 1/2 cup olive oil
  • 1 tablespoon black pepper
  • 1 tablespoon paprika
  • 2 tablespoons garlic powder
  • 3 tablespoons hot sauce
  • 3 tablespoons taco sauce
  • 1 cup bacon cut into pieces
  • 2 cups mexican blend shredded cheese
  • 1 cup diced green onion

How To Make buffalo chicken with loaded potatos

  • Step 1
    Preheat oven to 375. In a large bowl add chicken, red potatoes, olive oil, black pepper, paprika, garlic powder, hot sauce, taco sauce and bacon. Mix to coat.
  • Step 2
    Pour into a greased 13x9 baking dish. Put into oven and bake for 40 minutes.
  • Step 3
    Remove from oven, turn oven to 450. Top chicken and potatoes with cheese. Return to oven and bake for additional 10 minutes or until cheese is melted and golden brown.
  • Step 4
    Remove from oven and top with green onions and sour cream on side if you like.
