buffalo chicken sloppy joes
I bought a pkg of ground chicken and when I got home, did not know what to do with it. Got on line and found this recipe by Rachael Ray. It is a fairly old recipe by her. My husband & I really enjoy it. It's a keeper.

Ingredients
- 1 1/2 - 2 pounds ground chicken or turkey
- 2 tablespoons olive oil or vegetable oil
- 2 - carrots - finely diced
- 2 - stalks celery - finely diced
- 1 - onion - finely diced
- 2 to 3 - garlic cloves - minced - fresh or jar
- - salt & pepper to taste
- 2 tablespoons vinegar - any flavor you have
- 2 tablespoons brown sugar
- 1 tablespoon worcestershire sauce
- 1/3 cup buffalo wing sauce - mild or hot
- 1 cup tomato sauce
- 1 cup chicken broth
- 6 - burger buns - split & toasted
- 1 package (5 oz size) blue cheese crumbles
- - dill pickle slices - optional
How To Make buffalo chicken sloppy joes

Step 1Heat Skillet with oil over medium high heat. Brown Chicken, breaking up, for about 5 to 6 minutes. Add in carrots, celery, onion, garlic, salt & pepper. Cook for about 10 minutes more.

Step 2In a bowl combine vinegar, sugar, worcestershire, tomato sauce, broth & hot sauce. Combine sauce mix into chicken mixture and simmer until vegetables are tender and is the desired consistancy.

Step 3Pile filling onto buns and top with blue cheese and pickles if desired.
