buffalo chicken & blue cheese grits

Ingredients

  • 4 - chicken breast halves, skinless and boneless
  • 1/2 cup buffalo wing sauce
  • 2 3/4 cups chicken broth
  • 3/4 cup quaker quick grits
  • 1 cup blue cheese, crumbled
  • 1/4 cup sour cream
  • 1/4 teaspoon black pepper
  • 1/4 cup green onion, chopped

How To Make buffalo chicken & blue cheese grits

  • Step 1
    Preheat oven to 350 degree F. Place chicken breasts in lightly greased baking dish. Pour buffalo wing sauce over chicken. Bake 18 - 20 minutes or until centers reach 170 F. Remove chicken from oven & keep warm.
  • Step 2
    Bring chicken broth to a boil in medium saucepan. Slowly stir in grits; return to a boil. Reduce heat to medium-low & cook 2 minutes; stir in blue cheese. Cook an additional 2 - 3 minutes or until thickened, stirring occasionally.
  • Step 3
    Remove from heat; stir in sour cream & pepper. Divide grits amoung 4 shallow bowls. Cut chicken breast into thin slices & place on top of grits. Sprinkle with green onions & serve.
  • Step 4
    NOTE: Blue cheese grits are also delicious served with grilled steak!
