Ingredients
- 4 - chicken breast halves, skinless and boneless
- 1/2 cup buffalo wing sauce
- 2 3/4 cups chicken broth
- 3/4 cup quaker quick grits
- 1 cup blue cheese, crumbled
- 1/4 cup sour cream
- 1/4 teaspoon black pepper
- 1/4 cup green onion, chopped
How To Make buffalo chicken & blue cheese grits

Step 1Preheat oven to 350 degree F. Place chicken breasts in lightly greased baking dish. Pour buffalo wing sauce over chicken. Bake 18 - 20 minutes or until centers reach 170 F. Remove chicken from oven & keep warm.

Step 2Bring chicken broth to a boil in medium saucepan. Slowly stir in grits; return to a boil. Reduce heat to medium-low & cook 2 minutes; stir in blue cheese. Cook an additional 2 - 3 minutes or until thickened, stirring occasionally.

Step 3Remove from heat; stir in sour cream & pepper. Divide grits amoung 4 shallow bowls. Cut chicken breast into thin slices & place on top of grits. Sprinkle with green onions & serve.

Step 4NOTE: Blue cheese grits are also delicious served with grilled steak!
