This is a KRAFT recipe that I found in the formerly-free quarterly magazine that KRAFT used to mail out. I have tried this with pork-flavored stuffing & boneless pork chops, it was delicious. I like to serve this with steamed broccoli.

Ingredients

  • 1 1/2 lb
    boneless chicken, cubed
  • 1 can(s)
    diced tomatoes, 15 oz can
  • 1/2 c
    water
  • 1 tsp
    salt
  • 1 Tbsp
    minced garlic
  • 1 box
    chicken-flavored stuffing mix
  • 2 c
    shredded mozzarella
  • 1 Tbsp
    italian seasoning

How to Make Bruschetta Chicken

Step-by-Step

  1. Preheat oven to 400 degrees. Spray 9x13 inch glass baking dish with cooking spray.
  2. Toss chicken with salt. Place in a layer into the bottom of the baking dish. Stir together tomatoes, water, garlic and stuffing mix; let sit to soften.
  3. Sprinkle the cheese on top of chicken, then Italian seasoning and then stuffing mixture.
  4. Bake uncovered for about 30 minutes.
