broccoli and rice casserole

This is an easy dinner for busy moms on the go, I would know. Sometimes after a long day, you want a home cooked meal, but just don't have the time or energy, but guess again, this simple yet amazing casserole, is so easy to make, you can throw it together and will be done in no time, Enjoy.

Ingredients

  • 16 ounces of raw broccoli, or can use frozen
  • 2 cans 10.75 oz of cream of chicken soup
  • 1 cup white rice, cooked
  • 1 jar cheese whiz
  • 1 small can of chopped mushrooms drained **optional**
  • 2 cups of diced chicken,ham or turkey **your choice**

How To Make broccoli and rice casserole

  • Step 1
    Pre-heat oven to *325 **IF USING FROZEN BROCCOLI, DO NOT COOK BEFORE ADDING TO CASSEROLE** If using fresh broccoli, you must blanch it first... 1.Bring a large pot of water to a boil. 2 Fill a large bowl with water and ice. 3 Put the broccoli into the pot of boiling water and allow it to boil for three minutes. 4 Remove the broccoli from the pot and put it directly into the ice water, making sure the broccoli is covered with the water completely.
  • Step 2
    cook one cup of rice with two cups of water, on stove top, and choose your meat of choice, and make sure if using chicken or turkey, that its fully cooked. Most hams are already cooked.
  • Step 3
    in a 9x13 pan, mix all ingredients together and cover with tin foil, bake or 45- 1 hour.
