Ingredients

  • 20 oz
    broccoli, frozen
  • 2 Tbsp
    butter
  • 1/2 c
    celery, chopped
  • 1/2 c
    onion, chopped
  • 1 can(s)
    cream of mushroom soup
  • 1 can(s)
    cream of chicken soup
  • 2 c
    milk
  • 8 oz
    processed cheese spread
  • 2 c
    rice, cooked
  • 2 c
    chicken, cooked and chopped
  • 1/2 tsp
    pepper

How to Make Broccoli and Chicken Casserole

Step-by-Step

  1. Cook broccoli according to package directions; drain and set aside.
  2. Melt butter in a large skillet over medium-high heat; add celery and onion, and cook, stirring constantly, 3 minutes or until tender.
  3. Remove mixture from skillet, and set aside.
  4. Combine soups and milk in skillet; cook over medium heat, stirring often, just until thoroughly heated.
  5. Add cheese spread, stirring until melted; remove from heat.
  6. Stir in broccoli, celery mixture, rice, chicken and pepper.
  7. Spoon into a lightly greased 8-inch square baking dish.
  8. Bake at 350 for 30 minutes or until thoroughly heated.
  9. Notes: You can make this popular one-dish meal even better by relying on reduced-fat cream soups - perfect for casseroles.
  10. Some supermarkets also carry a lighter version of process cheese spread.
