Ingredients

  • 4 boneless chicken thighs, keep all the skin and fat on the chicken thighs
  • 1 tablespoon olive oil
  • salt
  • pepper
  • thyme
  • 1/2 loaf of ciabatta bread cut into cubes

How To Make brick chicken with chicken fat ciabatta croutons

  • Step 1
    Wrap a brick in tin foil. In a cast iron pan add the olive oil and get it hot. Season the chicken with salt, pepper, and thyme.
  • Step 2
    Place the chicken thighs skin side down in the cast iron pan. Place the foil brick on top of the chicken and cook about 10 minutes checking halfway through to make sure it doesn't burn.
  • Step 3
    Turn the chicken over and cook another 5 to 10 minutes depending on how thick the thighs are.
  • Step 4
    Remove the chicken from the pan and add the ciabatta cubes. Cook about 10 minutes until they are crisp on all sides.
