Ingredients For braised coconut chicken

8bone-in chicken thighs

2 Tbspgranulated sugar

2 tspsalt

1/2 tsppepper
-
1 Tbspchicken bouillon granules

2 Tbspvegetable oil

1shallot, chopped
-
4 clovegarlic, minced

2 Tbspfish sauce
-
2 cancoco rico coconut soda (12 oz each)

cilantro, for garnish
How To Make braised coconut chicken

1Mix the sugar, salt, pepper, and chicken bouillon granules together. Sprinkle over the thighs and let sit in fridge for 1 hour.

2Place oil in large Dutch oven. Brown the chicken in two batches until browned on both sides. Remove the chicken from the pan. Add the shallot, and garlic and saute for 20 seconds.

3Add the chicken back to the pan with the fish sauce and soda. Bring to a boil and simmer uncovered for 30 minutes until the chicken is done and the sauce has reduced. Serve garnished with cilantro.
