Ingredients
- 8 bone-in chicken thighs
- 2 tablespoons granulated sugar
- 2 teaspoons salt
- 1/2 teaspoon pepper
- 1 tablespoon chicken bouillon granules
- 2 tablespoons vegetable oil
- 1 shallot, chopped
- 4 cloves garlic, minced
- 2 tablespoons fish sauce
- 2 cans coco rico coconut soda (12 oz each)
- cilantro, for garnish
How To Make braised coconut chicken

Step 1Mix the sugar, salt, pepper, and chicken bouillon granules together. Sprinkle over the thighs and let sit in fridge for 1 hour.

Step 2Place oil in large Dutch oven. Brown the chicken in two batches until browned on both sides. Remove the chicken from the pan. Add the shallot, and garlic and saute for 20 seconds.

Step 3Add the chicken back to the pan with the fish sauce and soda. Bring to a boil and simmer uncovered for 30 minutes until the chicken is done and the sauce has reduced. Serve garnished with cilantro.
