Ingredients
- 4 chicken thighs
- salt and pepper
- 2 teaspoons olive oil
- 1 large onion, chopped
- 8 ounces mushrooms
- 4 cloves garlic, minced
- 1 cup white wine
- 6 cups chicken stock
- 1 bundle thyme
- 2 bay leaves
- 1/2 cup blanched almonds toasted
- olive oil
How To Make braised chicken and mushrooms

Step 1Season the chicken with salt and pepper. Add the olive oil to a large saucepan. Once it's hot, add the thighs skin side down. Let cook in the oil for about 10 minutes until the skin is golden brown. Turn the chicken and cook 5 minutes on the other side. Remove chicken to a plate.

Step 2Add the onion and season with salt, and cook for 3 minutes. Add the garlic and cook for 30 seconds. Add the mushrooms and season with salt. Cook 5 more minutes.

Step 3Add the wine and bring to a boil, let most evaporate.

Step 4Add the chicken stock and bring to a boil. Reduce to a simmer.

Step 5Add the chicken back into the pan with the bundle of thyme and bay leaves. Cook for 30 minutes.

Step 6Place the almonds in a food processor and process, adding some olive oil until smoothish.

Step 7Stir the almonds and cook for 5 minutes until thickened. Serve with mashed potatoes.
