Ingredients

  • 4 chicken thighs
  • salt and pepper
  • 2 teaspoons olive oil
  • 1 large onion, chopped
  • 8 ounces mushrooms
  • 4 cloves garlic, minced
  • 1 cup white wine
  • 6 cups chicken stock
  • 1 bundle thyme
  • 2 bay leaves
  • 1/2 cup blanched almonds toasted
  • olive oil

How To Make braised chicken and mushrooms

  • Step 1
    Season the chicken with salt and pepper. Add the olive oil to a large saucepan. Once it's hot, add the thighs skin side down. Let cook in the oil for about 10 minutes until the skin is golden brown. Turn the chicken and cook 5 minutes on the other side. Remove chicken to a plate.
  • Step 2
    Add the onion and season with salt, and cook for 3 minutes. Add the garlic and cook for 30 seconds. Add the mushrooms and season with salt. Cook 5 more minutes.
  • Step 3
    Add the wine and bring to a boil, let most evaporate.
  • Step 4
    Add the chicken stock and bring to a boil. Reduce to a simmer.
  • Step 5
    Add the chicken back into the pan with the bundle of thyme and bay leaves. Cook for 30 minutes.
  • Step 6
    Place the almonds in a food processor and process, adding some olive oil until smoothish.
  • Step 7
    Stir the almonds and cook for 5 minutes until thickened. Serve with mashed potatoes.
