My friend gave me this recipe. Karen is an excellent cook, so I trust her when she recommends a dish. I was not disappointed, and neither will you. Try it soon.

Ingredients

  • 2 pounds boneless chicken breast, cut into bite sized pieces
  • 1-2 tablespoon olive oil
  • 1 clove garlic, crushed
  • 1/4 teaspoon ground ginger
  • 3/4 teaspoon crushed red pepper flakes
  • 1/4 cup apple juice
  • 1/3 cup light brown sugar
  • 2 tablespoons ketchup
  • 1 tablespoon cider vinegar
  • 1/2 cup water
  • 1/3 cup soy sauce
  • 1 tablespoon cornstarch (if you want to thicken sauce)
  • 1/4 cup bourbon, you can use more or less, as desired. i use 2-3 tablespoons; i don't want to overpower the chicken

How To Make bourbon chicken

  • Step 1
    Heat oil in a large skillet. Add chicken pieces and cook until lightly browned. Remove chicken. Add remaining ingredients, heating over medium heat until well blended and dissolved. Add chicken and bring to a rolling boil. Reduce heat and simmer for 20 minutes, uncovered. Serve over hot cooked rice.
