blondie's chinese chicken and rice

I thought about dinner all day @ work. I knew the ingredients I had on hand, so I threw it together as I went along. The measurements are approximate, so adjust as you need to for your taste. This is so easy to make, and the payoff is wonderful!

Ingredients
- 2 1/4 cups chicken stock or broth
- 1 or 2 - green onions (all of it), thinly sliced
- 1 cup jasmine rice (any long-grained rice will do, but this kind is divine!)
- 4 tablespoons vegetable oil of choice, divided (not olive oil)
- - salt to taste
- 1 or 2 - celery stalks, thinly sliced on the bias
- 1/2 pound raw chicken tenders, cut into bite-size pieces
- 3 tablespoons soy sauce (i use low sodium)
- 1/4 cup cornstarch
- 1 teaspoon emeril's asian spice blend or chinese 5 spice seasoning

Step 1**RICE** In 2 qt saucepan, bring broth and green onions to a boil. Add 1 TBSP oil, rice, S&P to taste. Stir briefly and bring back to a boil. Reduce heat to low and cover. Allow to cook undisturbed for 20-22 minutes. In the meantime start cooking chicken.

Step 2**Chicken** Rinse and pat dry chicken pieces. Put in a medium bowl with soy sauce and cornstarch. Get your hands in there and mix until all chicken is coated well. In a wok or large skillet, heat 3 TBSP oil till shimmering. Saute' celery 2-3 minutes on med-high heat, the add chicken till starting to brown. Add cooked rice into pan with chicken and stir-fry till chicken is finished browning. Serve immediately in soup or salad sized bowl. ~~ENJOY~~
