I know this sounds crazy, but Applebee's has one of the best blackened chicken bowls I've ever had. Which inspired me to make my own version, and a better version at that. I made my own blackened rub and it turned out great. Slightly spicy with all the flavor you'd expect from a blackened chicken breast. The searing seals the juices inside the chicken and makes for a delicious dinner. A great compliment to the fettuccine Alfredo, since the Alfredo has a rich Parmesan taste

    chicken breast
  • 3 Tbsp
  • 1 Tbsp
    smoked paprika
  • 1/2 tsp
  • 1 tsp
    onion powder
  • 1 tsp
    garlic powder
  • 1/2 tsp
    cayenne pepper
  • 1/4 tsp
    black pepper
  • 1/4 tsp
    thyme, dried
  • 1/2 tsp
    oregano, dried
  • 1/4 c
  • 3
    garlic cloves, minced
  • 1 c
    heavy cream
  • 1/8 tsp
    black pepper
  • 1/4 tsp
  • 1/2 c
    Parmesan cheese
  • 6 oz
    fettuccine pasta

How To Make blackened chicken breast with fettuccine alfredo

Test Kitchen Tips
This recipe calls for 1/2 teaspoon of cayenne. That is a lot if you do not like spicy. We suggest cutting it down according to how spicy you like things.
  • Drying the chicken.
    Pat the chicken breast dry with a paper towel.
  • Coating the chicken in seasonings.
    Mix all the seasonings together and pat onto the dry chicken breast on both sides.
  • Searing the chicken.
    Heat butter in a skillet. Once hot, add the chicken one by one and cook for 3 min each side.
  • Baking the chicken in the oven.
    After the chicken is seared, bake for an additional 30 min at 375 F.
  • Cooking garlic in melted butter.
    FETTUCCINE ALFREDO: Melt the butter over medium heat. Add minced garlic cook for 3-4 min until garlic is slightly brown.
  • Pouring heavy cream into the butter.
    Slowly pour the heavy cream into the butter garlic mixture.
  • Parmesan cheese and seasonings added.
    Add the black pepper, salt, and Parmesan cheese. Cook for 5-8 min or until thick.
  • Thickened up Alfredo sauce.
    If it still looks runny after 8 min, turn the burner off and let it cool slightly on the burner. It will thicken up.
  • Adding cooked pasta to the Alfredo sauce.
    Cook pasta according to directions and toss with Alfredo sauce.
