Blackened Chicken and Pasta
chicken breasts, halved, boneless and skinless
green onion, finely chopped
1Cook linguini until al dente, drain and set aside.
2Preheat iron frying pan on gas grill at high heat for 20 minutes.
3Put poultry seasoning in shallow bowl.
4Put melted butter in a second shallow bowl.
5Dip chicken first in butter on both sides, then in poultry seasoning.
6Place in preheated frying pan and cook 5-6 minutes on each side.
7While chicken is cooking, melt remaining 6 tablespoons butter in a dutch oven.
8Add half and half and cayenne pepper.
9Heat over medium heat until mixture bubbles.
11Cover and reduce heat to low.
12Remove chicken from frying pan and slice into thin strips.
13Serve over hot linguini noodles and garnish with tomatoes and green onions.
