A Crock Pot/slow cooker meal that you put on and forget. Creamy and filled with roasted peppers, chicken, and of course, potatoes. Serve with veggies or a salad and crusty bread as a complete meal.

Ingredients For betty's creamy italian chicken with potatoes

  • 2 lb
    chicken breast, skin removed and cut in half or thirds if they are really big (1 kilo)
  • 1 lg
    onion, sliced as fine as you can
  • 2 tsp
    minced garlic
  • 1 c
    roasted peppers (capsicums), sliced or chopped
  • 2 lb
    red potatoes, leave skin on, slice to about 1/3 an inch thick (about 1cm)
  • 1 jar
    favourite pasta sauce
  • 1/2 c
    water to shake well with the sauce lid on and get all the contents out
  • 1 c
    creamed cheese
  • oil spray

How To Make betty's creamy italian chicken with potatoes

    Spray the Crock Pot/slow cooker with oil.
  • 2
    Put everything except the creamed cheese into the Crock Pot/slow cooker and give a quick stir.

    Drop the creamed cheese on top in the middle (don't stir).

    Turn the Crock Pot/slow cooker to HIGH and leave for 3 hours.
  • 5
    Stir in the creamed cheese (which is now soft and silken). Serve.
