This is the best ever recipe for entertaining family and friends. You won't miss any of the fun - you just have to sneak into the kitchen a few times. I like to serve this with a rice casserole and my Spinach Provencale. Just put them in the oven and enjoy your guests!

Ingredients

  • 12
    chicken cutlets
  • 12 slice
    cubed mozzarella cheese
  • 1/2 c
    olive oil, extra virgin
  • 1/2 c
    parmesan cheese
  • 1 c
    italian bread crumbs
  • 2 c
    sliced mushrooms
  • 1 c
    holland house white cooking wine

How to Make Best Ever Chicken Roll Ups

Step-by-Step

  1. Preheat oven to 350 degrees.
  2. Mix bread crumbs with Parmesan cheese.
  3. Roll a cube of mozzarella cheese with a chicken cutlet and fasten with a toothpick.
  4. Dip in olive oil then bread crumb mixture.
  5. Spray baking pan with non-stick spray and arrange chicken in a single layer
  6. Cook for 15 minutes, pour 1 cup cooking wine over chicken, cook for 10 more minutes, pour mushrooms over chicken and cook for approximately 20 minute more.
  7. You can easily adjust this recipe to serve as many as you'd like - I usually do!
