Just adopted this recipe and oh I am excited to making it my own!!! will let you know all my changes, first thing I am changing name to Beef Tamale Pie, just like My Mommy's! Next I am changing corn meal for Mazeca corn flour!!

Ingredients

  • 1/2 cup mazeca corn flour!
  • 2 cups water
  • 1/2 teaspoon salt
  • 1 cup sharp cheddar cheese, grated
  • 1 tablespoon instant onion, minced
  • 1 can kidney beans, rinsed and drained
  • 1 1/2 cups chicken, cooked and chopped
  • 1 - parsley sprig chopped

How To Make beef tamale pie

  • Step 1
    Mix cornmeal, water and salt in a saucepan; bring to a boil.
  • Step 2
    Simmer, stirring constantly, until mixture becomes very thick.
  • Step 3
    Remove from heat; stir in cheese and onion.
  • Step 4
    Spread mixture evenly into bottom and sides of a greased 2-quart baking casserole.
  • Step 5
    Mix together chili, kidney beans, pimientos and chicken; pour mixture into lined bowl.
  • Step 6
    Cover; bake in preheated 350 oven 35 to 40 minutes, or until bubbly.
  • Step 7
    Serve hot, sprinkled with chopped parsley.
