beautiful holiday chicken
This is such a beautiful dish! So good that your company will talk about it long after the party is over. I took the recipe for my mom's pork tenderloin and turned it into this. It's good to fix any day of the week, also. You can use bone-in split chicken breasts or 1 broiler fryer cut up with the skin removed.

Would this baked chicken be great during the holidays? Absolutely! It would be delicious in place of a big holiday turkey, but it's a meal that can be cooked any time of the year. Full of flavor, sweet barbecue sauce is a nice complement to the tart cranberry sauce. Onions and celery add pops of flavor. Once it cooks down, it makes a great sauce for the chicken to cook in. Super easy to make, the skin on the split chicken breasts crisps and holds in the juicy meat.
Ingredients
- 6 bone-in split chicken breasts
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup chopped onion
- 1/2 cup thinly sliced celery
- 4 tablespoons butter
- 1 can whole-berry cranberry sauce (16 oz.)
- 1 cup regular or honey barbecue sauce
How To Make beautiful holiday chicken

Step 1Salt and pepper the chicken.

Step 2Melt butter in a large skillet.

Step 3Brown chicken on all sides.

Step 4Transfer to a greased 9x13x2 baking dish.

Step 5Saute onions and celery in the chicken and butter drippings until tender.

Step 6Add cranberry and barbecue sauces. Mix well, and cook 2-3 more minutes.

Step 7Pour evenly over top of chicken.

Step 8Bake uncovered at 350 degrees F for 1 1/2 hours or until chicken juices run clear. Spoon sauce over chicken every 15 minutes of baking time.

Step 9Arrange chicken on a serving platter and pour sauce over all pieces.
