Ingredients
- BBQ CHICKEN
- 2 cups bbq sauce
- 1/4 cup orange juice
- 1 teaspoon cumin
- 4 cloves garlic minced
- 1 tablespoon olive oil
- 1 pound boneless chicken thighs cut into chunks
- SLAW
- 2 cups shredded red cabbage
- 1 cup carrots julienned
- 1/2 cup green onions chopped
- 1 cup mayo
- 1/2 cup red wine vinegar
- 1 tablespoon dijon mustard
- 2 tablespoons each sugar and heavy cream
- GRAIN
- 2 cups rice noodles brown rice or whatever grain you like
- TOPPING
- 1 cup fresh corn cut off the cob
How To Make bbq chicken power plate

Step 1For the BBQ Sauce mix the first five ingredients together. Stir in the chicken and place chicken and sauce in skillet. Cook until thickened and chicken is no longer pink. About 7 minutes

Step 2For the slaw mix the mayo, red wine vinegar, dijon mustard, sugar and heavy cream together. mix in the red cabbage, carrots and green onions. Season to taste with salt and pepper.

Step 3Cook your grains according to package directions. Cook the corn and cut off cob.

Step 4To plate. Place the grains on a plate. Top with BBQ chicken, slaw and corn.
