bbq chicken & mozzarella sandwich

I was trying to come up with something for lunch...something hearty for me and my husband. We hadn't gone grocery shopping so we used what we had on hand, so I came up with this. It turned out really yummy! I only used half a loaf, but you can double the recipe to use up the whole loaf!

Ingredients

  • 2 - frozen boneless chicken breasts
  • 1/4 cup barbecue sauce (preferably thick)
  • 1/2 - loaf of french bread
  • - mozzarella cheese

How To Make bbq chicken & mozzarella sandwich

  • Step 1
    preheat oven to 375 degrees F.
  • Step 2
    Brush chicken liberally with barbecue sauce, and bake for 20-25 minutes or until done.
  • Step 3
    While chicken is baking, slice french bread into half lengthwise and arrange on a baking sheet.
  • Step 4
    Let chicken rest for a few minutes before slicing into 1/4 inch slices, and divide the chicken onto the halves.
  • Step 5
    sprinkle with however much mozzarella cheese you would like and broil until cheese is melted, about 5 minutes or so.
  • Step 6
    close the halves and slice it into half. Plenty for two people!
